Jeannie's Pierogie Bake

My BFF Jeannie made this and brought it to a family gathering a few years ago and it has become a family favorite!!!  She will tell you and I will tell you that although you can make fresh mashed potatoes it is easier and just as yummy to to used the boxed mashed potatoes for this recipe!!


INGREDIENTS:

5 LB OF BOILED MASHED RED POTATOES OR 1 BOX OF INSTANT POTATOES (PUBLIX BRAND-ENOUGH FOR 10 SERVINGS)
1 8 OZ VELVETTA CHEESE LOG
1  1/2 LB OF BOW TIE PASTA (2 BOXES)
2 STICKS OF MARGARINE
2 LARGE ONIONS SLICED

PRE HEAT OVEN TO 350

MAKE POTATOES AS INSTRUCTED WITH A CREAMY CONSISTANCY. ADD CHEESE AS SOON AS FLAKES ARE ABOSRBED , WHEN USING BOXED MASHE POTATOES, AND STIR AND BLEND WELL. SAUTE ONNIONS IN 1 STICK OF MARGERINE.

SPRAY 9X13 COOKING DISH WITH PAM .  ADD 1/2 OF THE BOW TIE NOODLES TO DISH THEN ADD ALL OF THE POTATOE MIXTURE, THEN ADD THE REST OF THE PASTA, THEN ADD THE ONIONS ON TOP.  BAKE IN ONVEN 350 DEGREES FOR APPROXIMATELY 40- 50 MINUTES.
