Flank Steak smothered in mushrooms with baked potatoes

HOLLY AND JILLIAN'S FAVORITE MEAL

FLANK STEAK SMOTHERED IN MUSHROOMS WITH BAKED POTATOES

INGREDIENTS:

Flank steak ( do not use any other kind of steak, more expensive but worth every penny)
Fresh sliced mushroom approx 1 lb
Fresh sliced garlic 4-5  cloves
Salt and pepper and garlic salt
Lemon juice (approx 1 tbls)
Olive oil
3-4 tbl butter

With sharp knife make slits in flank steak and stuff with slices of fresh garlic.
Spread about 2 tsp of olive oil over both sides of meat
Mix togeather pepper, salt and garlic salt then spread this with your hands on both sides of meat.

In medium size pan melt butter  and 2 tbs of olive oil and add sliced mushrooms and salt, pepper and garlic salt ( about 2 tsp each) and cook until mushrooms are cooked add lemon juice and mix in with mushroom sauce, turn on very low and cover.

Put meat under broiler for approx 5 minutes on each side ,possibly more.  Meat should have a nice crisp outside on both sides.

Take meat out of the broiler and let set for about 3-5 minutes , then with electric knife or very sharp knife slice the meat on an angle, thin slices . Cover with mushroom sauce and serve!!!!

BAKED POTATOES

Large Idiho potatoes
Olive oil
Mixture of pepper, salt, garlic salt
Tin foil

Use your hands to spread olive oil over each potato
Then take  a pinch or two of the salt mixture and spread it all over the potatoes with your hands
Roll up potatoes in sheet of tin foil and twist the ends.

Place in 400 degree oven for approx 1 hour for large potatoes

When done use oven mit and gently squeeze each potato then take tin foil off and serve.
You can make a cheese sauce , or just have sour cream and butter on the potatoes. My girls love cheese sauce and broccoli !
