NO FAIL Whole BBQ Chicken on the Grill

This is the best recipe for cooking whole chickens on the grill without burning it or making it dryed out!!!

Feeds 2-3 people

1 small whole chicken
McCormick Barbaque rub
your favorite BBQ sauce
tin foil


Place whole chicken (back side up) on a cutting board.  With kitchen sizzors cut from end to end along back bone on both sides , removing the back bone completly!  Take a large knife and cut the breast bone just enough so the chicken is butterflied and can lie almost flat.

Heat grill on medium high  on only one side of grill (be sure you line grill grates with strong tinfoil and light grease with olive oil on both sides of grill )Close lid on grill and let heat up to 300-350 degrees.

In the mean while.......

Rub dry McCormick Barbaque rub all over chicken, back and front.

When grill is heated to suggested temp. Lay whole chicken (breast/skin side down on grill) Place a cast iron pan or a heavy brick (lined with tinfoil) on top.  Close lid and cook chicken for approx 25 minutes.

Flip Chicken over (breast/skin side up  and place on side of grill  that is NOT on (no flame).  Close lid again and cook for approx 1 hour, last 12 minutes spread your favorite BBQ sauce on chicken and finish cooking.

That is it!!! Easy peasy and OMG delish, moist, tasty, crispy skin NOT burnt!!  Cut in halph or quarters and serve with your favorite side dishes!!!
