Awesome quick Meatloaf for Two


Ingredients

  • 1 egg
  • 1/4 cup milk
  • 1/3 cup of italian breadcrumbs
  • 3 tablespoons chopped onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon rubbed sage
  • Dash pepper
  • 1/2 pound lean ground beef 
  • 1/2 pound of ground pork
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1/4 teaspoon Worcestershire sauce

Directions

  • In a large bowl, beat egg. Add the milk, italian bread crumbs, onion, salt, sage and pepper. Crumble beef over mixture and mix well. In a round cake pan spread meat mixture (be sure to spray olive oil on bottom and edges of pan first)
  • Combine the ketchup, brown sugar and Worcestershire sauce; spoon over meat. Bake at 350° for 40-45 minutes or until meat is no longer pink and a meat thermometer reads 160°; drain. Yield:  1 round meatloaf that can feed 2-4 people.
  • Delicious with brown gravy too but very tasty without any gravy at all, and I don't say that very often!
  • ** To make this recipe and add some fun to Halloween Dinner:
  • Take a pie crust dough (usually comes two to a pack) cut out Jack or lantern or Tim Burton's "jack" from Nightmare Before Christmas. And lay on top of meat loaf and pinch all around to make crust, put in oven and cook as normal (might want to cover ends with tin foil so as not to burn them).  I would assume it would work out with any design ,  for different holidays.
