Green Bean Almondine with Garlic and Blue Cheese

Ingredients:

3 heads of garlice (pre-baked in oven then minced)
2 TBLS of olive oil
salt and fresh ground pepper to taste
1 lb of fresh green beans-trimmed
1 TBLS of butter
1/3 cup of sliced almonds
few pinches of cayenne pepper
2-3 oz crumbled blue cheese


Cut tops 1/3 off of garlic heads to expose cloves.  Place garlic in baking dish cut side up on 3 4X6 sheets of aluminum foil.  Pour love oil over the garlic and season with salt.  Fold up foil  and seal to create  3 tight packets. Bake in pre heated 375 degree oven until cooked approx 1 hr.  set aside to cool and then mince.

Bring a large pot of salted water to a boil , add green beans and cook until bright green and nearly tender, 4-6 minutes.  Drain beans and trasfer to a large bowl of ice water to cool copletely, drain and set aside.

Melt butter in large skillet over medium heat. Add almonds, book and stir until lightly browned, 3-4 minutes.

Toss green beans, roasted garlic and oil, toasted almonds and together in a large  bowl, season with acyenne pepper, salt, and black pepper.  Transfer to a shallow baking dish and top with blue bheese.

Bake until cheese is melted and beans are fully tender , about 15 minutes.
