This recipe is for you "Aunt" Linda! My sister in-law Linda became a reformed chicken salad eater after I made this recipe several years ago, it has remained a family favorite for road trips/camping trips and quick get together lunches.
Ingredients:
Rotisserie chicken (from you local food store, already cooked)
(take home and remove skin and de-bone and cut into chunks)
1 cup real mayo (add a little more if you like in creamier)
1 cup of seedless green grapes cut in half
1/2 cup of chopped walnuts (optional)
1 tbs of salt
1/4 of cup of sugar (this is an important ingredient)
1 tsp of black pepper
1 medium onion diced
Mix all ingredients well in large bowl, cover and refrigerate for 1-2 hours.
Best served on fresh cut large crescent bread (Sam's club, BJ's and Costco sell these at the best prices) but smaller packs can be purchased at regular grocery stores.
