Home-made meatballs and Homemade sauce

The famous Meatballs...........these are NOT for the light eaters LOL, these meatballs are hearty and full of yummo ingredients but most of all they are BIG!!

3lbs of ground beef
1 lb of ground pork
2-3 cups of italian breadcrumbs
2-3 cups of grated parmesean cheese (don't scimp)
2 tsp salt
1 tsp pepper
2 eggs uncooked
3/4 cup milk
1 large onion chopped
3 garlic cloves chopped


In large mixing bowl mix both meats togeather well
add onion/cloves/salt/pepper and again mix well (doing this with your hands is really the only way to do this)
make a large well in the middle of the meat
crack 2 large eggs in center and beat add milk/parmesean cheese/and 1 1/2 cups of the bread crumbs mix all through and add the rest of the bread crumps until entire mixture is mixed completly!!

Preheat oven to 400

use two large baking pans with lips (so greese does not overflow onto oven)
form large meatballs into palm of hand (about the size of two golfballs) roll in your hands until you make a nice smooth ball place on baking pan, you can place the meatballs very close togeather.

Cook in middle of oven for approx 2o -25 minutes, they will have a nice brown exterior. Take them out of the oven and let them rest, take a flat spatula and gently toss them so they do not stick to the pan. Add them to your favorite sauce (hopefully my spagetti sauce recipe to follow) simmer in pot with sauce for 1 hour!! Delicious!!!!



My Mom's italian sauce recipe:

We make a nice big pot of this sauce enough to feed 7-10 people!

1 Large cooking pasta pot
1 large onion chopped
4 gloves of garlic chopped
1 green onion chopped
3 tbls of italian herbs
2 tsp of salt
2 tsp of pepper
1 tbl of garlic powder
3 pinches of sugar
1 large 32 oz can of tomato sauce
1 large 32 oz can of crushed tomatoes
1 16 oz can of chopped tomatoes
olive oil

In large pot simmer olive oil (enough to cover bottom of pot) , onions, garlic, spices, green pepper until onion is clear , you may have to add more olive oil , add all cans of tomatoes and mix well, add 2-3 pinches of sugar (this takes the acidy tast out of the sauce). bring to a slow boil then turn down to simmer and let sauce cook throughout the day or at least 2 hours, don't forget to add those meatballs and let simmer for 1 hour YUMMMMMOOOO

ALTERATIONS: you can add a few pinches of crushed red pepper to spice it up a bit and add some heat.
you can add a cup or so of white wine very nice if you are serving over linguini and adding any kind of seafood to your dish!!

This sauce freezes well, so don't be afraid to make a nice pot of this sauce.
