4 skinless boneless chicken breast cut into strips or 1 Sam’s club roasted chicken
2-3 clery stalks with leaves chopped
1 medium onion cut in half
1-4 whole bay leaves
1 tbls salt
1tbls pepper
6 -8 cups of water with chicken bullion or chicken stock flavoring
Bring all above ingredients to as boil and them simmer (uncovered for 2 hours).
Remove chicken pieces then strain stock, dispose of all remaining ingredients in strainer.
Dumplings:
2 cups all purpose flour
1 tbls baking powder
1tsb salt
1 cup of water
mix ingredients well, let dough set for 30 minutes, roll out 1/4 inch thickness and cut into strips approx 2 inches long and 1 inch wide.
add dough strips (all of the dough strips) to simmering stock. dough will swell and slowly shrink as you continue to simmer them in the stock for approx 30-40 minutes, stock will thicken ( you can add a little flour to thicken if desired. Be patient with this part of the process , the dough will swell and then reduce in size after it cooks down and all the way through!
Add chicken strips or no skin chicken pieces to stock and dough mixture and heat through. Boneless /skinless chicken breasts strips are traditional but a whole roasted chicken used to flavor broth then taken out to cool and skin removed and chicken pieces is delicious in this meal as well.
