After cooking two big meals 2 days in a row I needed a break! So excited to see the rest of the family today at Alicia & David's......he is making his award winning ribs and chicken on the grill and all of us are to bring a dish to share!
I wanted to make it easy on myself since I was pretty tired of cooking for the past few days non stop soooooo my daughter Holly came up with a great dish to bring to the gathering. This simple salad has been made by my mother for years and enjoyed by all of us for many more.
Italian cucumber &and Onion salad
1 med red onion (cut in half and then sliced)
1 med yellow onion (same as above)
4 cloves of fresh garlic minced
1 tbls of italian seasoning
2 tsp garlic salt
2 tsp pepper (fresh ground is best)
3-4 tabls of balsamic vinager
3-4 tabls of extra virgin olive oil
2-3 large cucumbers (skinned , I like to leave thin lines of green skin) then sliced not too thin
In large serving bowl combine all ingredients well, cover with seran wrap and chill in refrigorator for approx 2 hours...........soooooo yummo.
