Art Carney's Homemade Toffie

This recipe has a wonderful story with it:

Many years ago , in my early 20's I was working at a Nursing Home. One of my patients "Muzzy" was shall we say "could be difficult with most of the staff" but for some reason Muzzy and I just clicked , therefore on my shifts I became her main caregiver. She had a lovely family, her son-inlaw was Art Carney, who played Ralph on the Honeymooners many years ago! Well often Art and his wife would visit and durring the Christmas Holidays would bring trays of their homemade Toffie for the staff to share to show their appreciation. Needless to say it was a BIG hit. Well , it was to be my last Christmas season at the Nursing Home , as I was moving to Florida. Many times staff and myself had asked for the recipe but was politely told it was a family secret LOL. Well, to my delight, a special box was presented to me the last week before Christmas by Art and his wife and asked me not to open it until Christmas. So, I did just that, when I opened the box there was a letter thanking me for taking such good care of thier Mom for the past few years and it included "the family recipe for Toffie" !!!! I was soooo delighted , the next year I made my first batch for Christmas and it was just as wonderful as I remembered. So every Christmas season since then I have made this wonderful Toffie and have aptly named it "Art Carney's Homemade Toffie. I have not given the recipe out yet but I think it is soooo good that the world should share in the happiness it has brought my family and friends for years as well as all of the Carney's family and friends!!!


1lb of butter
2 cups sugar
1 tbls water
1/4 tsp cinnimon
1/2 cup of chopped nuts (walnuts/pecans)
1 bag hershey milk chocolate
1/2 tsp vanillia

candy thermometer
large cookie tray with lip

In med pot on med/hight heat cook butter/sugar/water to 260 degrees on candy thermometer
add 1/2 cup chopped nuts & 1/2 tsp of vanillia
cook until candy thermometer ready 305 degrees

Pour into baking sheet aprrox 15 X 10 1/2 with rim

melt choc chips in pot on stove top pour over candy mixture and sprinkle with finely chopped nuts.

Let set approx 1 hour.

The easiest way to make serviing sizes chuncks of candy.......take flat edge screwdriver and hammer, place tip of flat edge screwdriver on candy and tap firmly with hammer, candy wil crack like ice, continue to make several of these hits , store chucks in box lined with parchment paper in layers or cookie tin.

This Toffie makes GREAT gifts.............never had anyone that didn't just fall in love with this treat!!! Hope all of you can add it to your family holiday traditions too.


HINT::: do not rush the heating process the candy thermometer will tell you when it hits each level........watch carefull and continue on same heat.......do NOT over cook, it will taste and smell like burnt candy YUK! When you take your time and get it just right it is the best!!! If you undder cook it and do not let it get to 305 degrees it will be too soft and not "crack candy" and will not be very good. So be PATIENT!!!!
